On Today’s Episode Of….
On today’s episode of “Why the Fuck Did I Plan Such High Energy Meals When I Went Grocery Shopping” we go back to our popular segment of “Scrounging Through the Kitchen Cupboards” for Refried Beans and Eggs.
I just didn’t feel like eating any of the food I bought. Don’t get me wrong. It is all amazing: poblanos, dill, spinach, octomari eggs, semolina, oat bran, asparagus, pickles, chicken….I could keep going. I planned on making fancy things like chicken parm, yam noodle stir fry with octomari, Dijon chicken, roulaten with semolina spaetzel, catfish and couscous, shrimp with spinach. It all sounds fantastic, right? But it all takes a lot of effort.
I want to go back to being that woman who has the energy to make amazing meals and spend all day doing activities. Well, maybe not spend all the day doing activities, but definitely be more productive and not feel overwhelmed and exhausted just going to the store. I’m obviously not there yet, but hopefully I will be there again soon. Another Month and a half and I will be able to go back to the gym and resume laser hair removal. Know that the gym will be really helpful with my cancer care and my diabetes.
Before I move on to updates about my cancer, let me tell you how I made the Refried Beans and Eggs.
Ingredients:
1 can refried beans
Sour cream to taste
Hot sauce to taste
Spices to taste (I added granulated roasted garlic, granulated onions,
Your favorite cheese
Fried eggs (or however you want your eggs)
In a sauce pan mix all of the ingredients except the cheese and eggs. Once it is to the temperature level you want plate the beans, top with cheese and eggs. Enjoy!
So, back to the cancer update. I know I talked all about my grand adventure with Tamoxifen. I finally bounced back to mostly myself. I’m still quite fatigued, but my bursts of energy are becoming more frequent. I spoke with my oncologist this past week. After my experience feeling unheard by my oncologist, I wasn’t expecting anything encouraging from the chat. I was pleasantly surprised.
He was very worried about my side effects and the rate that they escalated. He said that given how hard Tamoxifen was on me, he is worried that the method of putting my ovaries to sleep and then taking a daily pill to make sure that my body has no estrogen would be equally bad for me. He recommended trying half a dose of Tamoxifen. There is some science that says it is effective, but it isn’t as well tested as the full dose.
In the end, we decided that I will get a second opinion about next steps at a reputable cancer research center. My referral went through so I just need them to call me and set up an appointment. I’ve also done some research into holistic ways to manage my estrogen. Exercise, weight loss, change of diet, adding some herbs and vitamins. It looks like the best diet is a Mediterranean diet, which is good because that won’t be much of a change for Polaris.
